CHERMOULA SKEWERS
INGREDIENTS
Chermoula Paste 10 gms basil leaves
5 gms cumin seeds Salt, pepper to taste
5 gms coriander seeds Skewers
5 gms chopped and deseeded 2 Bamboo skewers soaked in
chillies water
15 gms chopped garlic 4 pieces paneer
10 gms chopped ginger 4 pieces bell peppers
5 gms chilli powder 4 tomatoes deseeded
10 gms lemon juice 4 onions
100 ml extra virgin olive oil 2 button mushrooms
METHOD
Chermoula Paste
- Roast the cumin and coriander seeds in a pan. Crush them in a mortar and pestle
- Add all the ingredients in a mixer jar and grind to a fine paste
Skewers
- In a mixing bowl add all the ingredients for the skewers and the chermoula paste and mix well
- Thread the vegetables alternatively on the skewers as required
- Heat the grill pan and grill the skewers for 2-3 minutes
- Serve hot along with some salad or bread
