In a Jiffy with Chef Harpal Singh Sokhi

Chef Harpal Singh Sokhi, who hosts the popular show Turban Tadka on the Food Food channel, has worked at Vintage – an Indian specialty restaurant in Luxembourg and other five-star restaurants in India. An Indian food specialist, he harbours the dream of popularising Indian cuisine across the globe.

Kesari Indrayani

A few saffron strands mixed with 1 tablespoon of warm milk
1 medium watermelon
1 medium musk melon
1 large papaya
1 large apple
9 red grapes
500 grams angoori rasmalai
½ cup milk
20 green grapes

  • Using a parisienne scoop, scoop out thirty five round balls from the watermelon, twenty five from the musk melon, thirty five from the papaya and thirteen from the apple. The remaining portions of each fruit can be used to make some other dish.
  • Set aside four red grapes for the garnish and cut the remaining into round slices.
  • Place the angoori rasmalai in a large bowl. Add milk and mix gently. Add all the fruits, including green grapes, and mix gently again.
  • Transfer this into four martini glasses and drizzle the saffron milk on top. Decorate the rim of each glass with a red grape and chill before serving.

  • Grapes are rich source of micronutrient minerals like copper, iron and manganese. They are also good sources of vitamin C, vitamin A, vitamin K, carotenes and B-complex vitamins such as pyridoxine, riboflavin and thiamin.
